Will the alarm still function if I sleep/lock the device?
Yes. The alarm will still function as expected while the device screen has been locked, as long as you do not exit the app prior to locking the screen.

I have removed the app from my device however I continue to receive local notification alerts at the alarm times I had previously set.
The current version of iOS does not automatically delete local notifications if you happen to delete the app while alarms are still scheduled. To remove the notifications you can a) perform a hard reset of your device by press-holding the Home button and the Sleep/Wake button simultaneously until the iPhone shuts off and begins to restart (let go when see Apple logo), or b) reinstall and launch the app again (ensuring no alarms are set). Upon exiting the app, all local notification associated with Alarm Tunes will be canceled.
